
Easy Fig Pastry

Delicious flaky pastry with figs, goat cheese and walnuts. SUPER easy to make! Perfect as a dessert, appetizer or even as part of brunch.
Ingredients

1 sheet of good store-bought puff pastry, thawed in fridge for 3 hours or so

8 oz fresh black mission figs

4–5 oz goat cheese, room temperature

1/4 cup walnuts, roughly chopped; more for garnish if desired

2 tbsp good fig jam

1 tbsp butter, melted

1/4 cup fresh mint leaves, roughly chopped (optional)
Directions
Preheat oven to 375F.
Divide thawed puff pastry into four fairly equal rectangular pieces and place on baking sheet lined with parchment paper.
Spread goat cheese on each piece. Add jam, figs and then chopped walnuts.
Brush figs and edges of puff pastry with melted butter.
Slightly turn pastry edges up.
Bake in 375F oven for 18-20 minutes or until pastry is golden and puffy.
Garnish with chopped mint leaves and more walnuts, if desired.
