  • Red Split Lentils: Quick and easy to cook, these organic red split lentils are slightly sweet, creamy, and can easily absorb flavors from aromatics and spices.

  • Black Lentils: Known for their high nutritional value, mild earthy flavor and firm texture, these organic black lentils are an essential ingredient in the Mediterranean pantry.

  • French Green Lentils: These organic lentils are known for having a pleasant, mild peppery taste. When cooked, their firm texture allows them to hold their shape well without turning mushy.

How to Use

Red Split Lentils:

  1. Rinse 1 cup of lentils.
  2. Place lentils in a large saucepan and add 3 cups of water or stock.
  3. Bring to boil, cover and reduce heat and simmer until tender for about 15 minutes.

Black Lentils: 

  1. Rinse lentils well with fresh water. Pick over to remove any debris. 
  2. Combine 1 cup black lentils with 3 cups of liquid (water, stock, etc). Be sure to use a large enough saucepan, lentils will at least double in size. 
  3. Add seasoning of choice. 
  4. Stir in a pinch of kosher salt (the salt will slow the cooking, but it will enhance flavor and help make the lentils easy to digest). 
  5. Bring to a boil, then cover and reduce heat to medium-low. 
  6. Simmer until lentils are tender (about 20 to 25 minutes, adding more water as needed to keep the lentils submerged).
  7. Once the lentils are cooked, strain them well before serving.

 French Green Lentils: 

  1. Rinse one cup of dried lentils with water; pick over and remove any debris.
  2. Transfer them to a saucepan and add 3 cups liquid (water, broth, etc.).
  3. Add seasonings and aromatics of choice. 
  4. Add a pinch of salt (salt may slow down cooking a bit, but it is important to flavoring the lentils).
  5. Bring the water to a rapid simmer, then cover and reduce heat to medium-low.
  6. Simmer until lentils are tender (anywhere from 25 to 45 minutes, adding more water as needed to keep the lentils submerged).
  7. Once the lentils are cooked, strain them well before serving.

Red Split Lentils: Red lentils are easy to cook. We especially enjoy them in soups, adding aromatics and vegetables!

Black Lentils: For a healthy side next to things like Greek baked cod or Spatchcock chicken, simply cook black lentils as indicated above and finish them with a drizzle of our Early Harvest Greek extra virgin olive oil.

French Green Lentils: Green lentils are super versatile and can be used in a variety of ways–from salads, to satisfying sides, and hearty stews.
