Freekeh has a distinctly rich, smoky, nutty flavor that pairs beautifully with warm spices and fresh herbs. Its pleasant chewy texture makes it extra hearty, and an excellent substitute for rice or pasta.

How to Use

  1. Rinse 1 cup freekeh and look through it briefly to check for any debris and pick them out.
  2. Combine with 2 1/2 cups of water or broth in a saucepan.
  3. Bring to a boil.
  4. Reduce the heat, cover, and simmer over low heat until the grains are tender and slightly chewy, about 40 minutes.
  5. Drain any remaining water.

Suzy's Tips

Freekeh works very well in a variety of dishes and its flavor goes particularly well with warming spices and herbs. You can use it as you do other grains–as a simple side dish, tossed in a salad, or added in a soup like I do with barley. It also works well as a bed for a saucy protein dish, like shrimp fra diavolo, wine-braised chicken thighs, or Lebanese-style meatballs.

Frequently Asked Questions

What is freekeh?

Freekeh is an ancient grain made from young, green durum wheat that's harvested early, then roasted or smoked before being polished. Popular throughout the Levant and North Africa, it has a distinctive smoky, nutty flavor and a pleasantly chewy texture that makes it a hearty alternative to rice or pasta.

What makes this freekeh different?

Our freekeh is sourced from Turkey and made from premium green durum wheat that's traditionally roasted to develop its signature smoky flavor. It's naturally rich in dietary fiber, protein, vitamins, and minerals, contains complex carbohydrates, and has a low glycemic index. It's also all-natural and non-GMO, with no artificial additives.

What does freekeh taste like?

Freekeh has a rich, nutty flavor with subtle smoky notes from the roasting process. Its chewy texture makes it satisfying in grain bowls, salads, soups, and side dishes, while pairing beautifully with Mediterranean herbs, warm spices, vegetables, and grilled proteins.

How do I cook freekeh?

Rinse 1 cup of freekeh, then combine it with 2½ cups of water or broth. Bring to a boil, reduce the heat, cover, and simmer until the grains are tender but still slightly chewy—about 35–40 minutes for whole-grain freekeh. Drain any excess liquid and fluff with a fork before serving.

What can I make with freekeh?

Freekeh is incredibly versatile. Use it as a substitute for rice or pasta in grain bowls, salads, soups, pilafs, or as a hearty side dish. It also makes an excellent base for saucy proteins like braised chicken, shrimp, meatballs, or roasted vegetables. Try it in recipes like Herby Freekeh Salad, Freekeh Soup with Chicken, or Grilled Stuffed Peppers with Spiced Chicken and Freekeh.

Is freekeh healthier than rice?

Freekeh is a nutrient-dense whole grain that's naturally rich in dietary fiber, protein, vitamins, and minerals. It also contains complex carbohydrates and has a low glycemic index, making it a satisfying alternative to refined grains. Whether it's "healthier" than rice depends on your dietary needs, but freekeh is an excellent choice if you're looking to add more whole grains to your meals.

What is the difference between freekeh and farro?

Both freekeh and farro are ancient wheat grains, but they differ in flavor and texture. Freekeh is harvested while the wheat is still green and then roasted, giving it a distinctive smoky, nutty flavor and a firmer, chewier texture. Farro is harvested when fully mature and has a milder, slightly sweet, nutty flavor.

"I am very excited to find this source to buy Freekeh. A small grocer in my town had it once and I loved it. They stopped carrying it and I was unable to find it. I am so pleased to be able to order it again from The Mediterranean Dish!"

Honestly, this Southern girl had

"Honestly, this Southern girl had never heard of Freekah until I started following Suzi, but girl I'm hooked. This ancient grain is awesome. Full of fiber, protein and lots of vitamins and minerals. I mostly use it for Grain bowls. Just cook the Freekah as directed, add nuts, cucumbers, tomatoes, leafy greens,Chick peas for added protein raisins, etc. Get creative. I don't think I've made it the exact same way twice, but I always top it off with Suzi's olive oil, Urfa Bieber spice and Feta cheese. Give it a try, you won't be sorry."
