Description

Pearled barley is an ancient grain with a pleasant chewy texture and a slightly nutty flavor. It is also quite nutritious and rich in fiber, vitamins, and minerals. Pearled barley is the most common form of barley, and it cooks at a much quicker rate than typical barley. This is because the outer layers of the barley have been partially removed, leaving only a small, smooth pearl. An ideal alternative to rice, pearled barley adds heft to soups and stews, makes a wonderful pilaf, and can even be cooked into a hearty porridge.

Suzy's Tips

I love using barley in soups, salads, or as a base for delicious dinner bowls. I have used it as a stuffing for squash, Persian Soup Jo (Chicken Barley Soup), and more. When I'm in the mood for something sweet, a bowl of warm barley with warmed milk and a good drizzle of Greek honey is my breakfast cereal.
