Description

Freekeh is an ancient grain popular in the Levant and North Africa. It’s made from young, green durum wheat that’s been roasted or smoked, and then polished to remove the shells. Freekeh has a distinctly rich, smoky, nutty flavor that pairs beautifully with warm spices and fresh herbs. Its pleasant chewy texture makes it extra hearty, and an excellent substitute for rice or pasta.

How to Use

  1. Rinse 1 cup freekeh and look through it briefly to check for any debris and pick them out.
  2. Combine with 2 1/2 cups of water or broth in a saucepan.
  3. Bring to a boil.
  4. Reduce the heat, cover, and simmer over low heat until the grains are tender and slightly chewy, about 40 minutes.
  5. Drain any remaining water.

Freekeh works very well in a variety of dishes and its flavor goes particularly well with warming spices and herbs. You can use it as you do other grains–as a simple side dish, tossed in a salad, or added in a soup like I do with barley. It also works well as a bed for a saucy protein dish, like shrimp fra diavolo, wine-braised chicken thighs, or Lebanese-style meatballs.

"Honestly, this Southern girl had never heard of Freekah until I started following Suzi, but girl I'm hooked. This ancient grain is awesome. Full of fiber, protein and lots of vitamins and minerals. I mostly use it for Grain bowls. Just cook the Freekah as directed, add nuts,cucumbers,tomatoes,leafy greens,Chick peas for added protein raisins,etc. Get creative. I don't think I've made it the exact same way twice, but I always top it off with Suzi's olive oil, Urfa Bieber spice and Feta cheese. Give it a try, you won't be sorry."
