Description

Pearl Couscous–pronounced Koose Koose–is made of small balls (or pearls) of toasted semolina flour. Pearl couscous is a versatile Mediterranean staple that’s easy to cook and can be ready in 15 minutes or so.

Pearl couscous looks like a grain, but it’s actually a type of pasta. It is made of tiny spheres of toasted semolina flour (which is made from durum wheat). Similar to pasta in texture, it becomes slightly chewy when cooked (sort of like orzo). It cooks fast and can be served plain, simply seasoned with kosher salt, or you can dress it up in a variety of ways.

How to Use

  • Measure 1 cup of couscous and toast in 1 tbsp of olive oil over medium heat until golden brown.
  • Add salt and 1.5 cups of boiling water.
  • Bring to boil then reduce to simmer.
  • Cover and cook for 15 minutes or until tender.
  • Drain.

Pearled couscous is one of my favorite quick side dishes – and it’s so versatile! Here are some ideas for how to use it:

  • Salads: Pearl couscous adds heft to a Mediterranean couscous salad.
  • Grain bowls: Make delicious dinner bowls using pearled couscous as a base.
  • With pesto: This is a little unconventional, but you can toss cooked pearl couscous with a little pesto and use it as a base for grilled chicken for a quick meal.
  • In soups and stews: Add some cooked pearled couscous to your favorite soup to add bulk. (It’s phenomenal in my lemon chicken soup!)

Do not in any way warm up the olive oil in a microwave or put it in direct sunlight. Olive oil is best stored in a cool dark room to preserve its life and quality.
