Both use a small amount of rapeseed oil (commonly known as canola oil). For Aleppo Pepper, the oil is part of the traditional production process. Urfa Biber is traditionally cured through a process that includes sun-drying during the day and resting overnight, which allows the peppers to retain moisture and develop their distinctive smoky, raisin-like flavor. A small amount of oil helps maintain this unique texture and flavor profile while preserving the spice after grinding. All other spices in this collection are free from added oils.
